Pork fillet ragout

Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 1 large onion(s)
  • 3 large beefsteak tomatoes
  • 2 cloves garlic
  • 1 chili pepper(s)
  • 2 tbsp oil (palm oil)
  • 1 pinch of salt and pepper
  • 2 tsp lemon juice
  • 2 tsp honey
  • 1 tbsp Worcestershire sauce
  • ¼ liter vegetable broth, hot
  • 150 g cheese (Chester), grated
  • n. B. Tagliatelle, cooked

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the meat into approximately 2 cm cubes. Finely chop the onion and garlic cloves. Blanch the tomatoes in hot water, peel, and cut into pieces, removing the stems. Finely chop the chili pepper. Brown the meat and onions in hot oil. Add the tomatoes, garlic, and chili pepper to the meat and stir. Add the salt, pepper, lemon juice, honey, Worcestershire sauce, and vegetable stock and simmer over medium heat for 30 minutes. Serve sprinkled with Cheshire cheese and a side of tagliatelle.
