Pork fillet with cheese crust

Ingredients for 3 servings:

  • 500 g pork fillet(s)
  • 2 tbsp oil
  • salt and pepper
  • 2 slices of toast bread, 50 g
  • 100 g Gouda, old Gouda
  • 1 bunch of basil
  • 1 bunch of parsley
  • 3 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

with basil and parsley

Cut the fillet into 6 medallions. Briefly sear in hot oil, season with salt and pepper. Place in an ovenproof dish. For the crust, crumble the bread. Grate the cheese and chop the herbs. Mix everything together and stir in the oil to form a paste. Spread evenly over the fillets and bake in a preheated oven at 200°C (top/bottom heat) for 15-20 minutes.
