Pork fillet with fruit – onion – balsamic – sherry – dressing

Ingredients for 2 servings:

  • 350 g pork fillet(s)
  • 3 red onions, diced
  • 1 small can of peaches or pears, quartered
  • 250 g mozzarella, sliced
  • 125 ml sherry
  • 125 ml balsamic vinegar, red or white
  • 1 tbsp honey
  • 2 tbsp sugar
  • 1 pinch(s) of pepper
  • 1 pinch of salt
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Baked fruit fillet

Cut the pork fillet into slices approximately 3 cm thick. Season with salt and pepper on one side. Brown in hot oil (seasoned side first). Season the other side and turn the meat over. Fry for approximately 3 minutes on each side, remove from the pan and set aside in a greased baking dish. Drain 3/4 of the fruit juice. Add honey to the same pan and caramelize the onions in it. Add the sugar and fruit. To deglaze, stir in the sherry and balsamic vinegar and simmer. Once reduced (it should thicken), add the sauce to the meat. Place the mozzarella slices on top of the meat and then bake in the oven (middle rack) at approximately 170 degrees Celsius (convection oven) for approximately 30 minutes. Fresh salad and (green) pasta are suitable as a side dish.
