Pork fillet with sage and fine spices

Ingredients for 2 servings:

  • 500 g pork fillet(s)
  • 6 slices of ham
  • 10 sage leaves
  • 1 tsp pepper, mixed
  • 3 grains of allspice
  • n. B. Anise

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Salt the pork fillet and cut into two equal pieces. Crush the mixed pepper, allspice, and aniseed in a mortar and pestle. Then toss the pork fillet in the spices on a flat plate. Place three slices of ham next to each other. Distribute five sage leaves on each slice, then roll a piece of pork fillet in the ham. Secure it with kitchen string or small roulade pins, but make sure you do it in such a way that you can easily sear the meat all over. Roll up the second piece of pork fillet in the same way. Now either heat up a contact grill and grill the pork fillet for about 20 minutes. Alternatively, heat a little oil in a non-stick pan and sear the pork fillet well on each side, then place it in a preheated oven at 180°C (top/bottom heat) for about 15 minutes.
