Pork goulash with green beans, tomatoes and sweet potatoes

Ingredients for 4 servings:

  • 400 g sweet potatoes
  • 500 g green beans
  • 2 onions
  • 3 garlic cloves
  • 1 tsp, leveled paprika powder, smoked
  • 500 g beefsteak tomatoes
  • 500 g pork
  • 2 tbsp oil
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 3 tsp, leveled chicken broth powder
  • Salt and pepper, from the mill
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Peel and dice the sweet potatoes. Trim and chunk the beans. Peel and finely chop the onions and garlic. Wash the tomatoes, remove the stems, and dice them. Dice the meat or buy it pre-chopped from the butcher. Brown the meat cubes in hot oil in a non-stick pan and then remove. Sauté the onion and garlic cubes in the frying fat until translucent. Return the meat cubes to the pan. Add the curry powder, cumin, and paprika powder. Pour in 500 ml of water and add the tomato cubes. Stir in the chicken stock and bring to a boil. Add the beans and sweet potato cubes and simmer for about 35 minutes. Add more water if necessary. Season to taste with salt, pepper, and paprika. Rice goes well with this dish.
