Pork in cucumber sauce

Ingredients for 6 servings:

  • 1 kg pork, cut into strips
  • 1 tbsp clarified butter
  • 2 onions, finely chopped
  • 1 tbsp oil
  • 100 ml water
  • 250 ml white wine
  • 150 ml tomato(s), pureed
  • 6 gherkins
  • 1 tbsp mustard
  • 100 ml cream
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the onion and sauté in hot oil. Add water and sauté until the liquid evaporates. Finely dice the gherkins. Cut the meat into strips and fry in hot clarified butter. Once the meat has browned, add the onion, diced gherkins, mustard, wine, and passata and cook over moderate heat for about 20 minutes. Finally, add the cream and season with salt and pepper. Serve with mashed potatoes.
