Ingredients for 4 servings:
- 4 pork medallions, rather thickly sliced (approx. 3-4 cm)
- Clarified butter
- 125 ml red wine or broth
- 1 cup crème fraîche
- salt and pepper

super tender result, very simple basic recipe
Briefly wash the medallions if necessary and pat dry. Heat clarified butter and sear the medallions briefly. Season with salt and pepper. Transfer to an ovenproof dish and finish cooking in an oven preheated to 180°C for 8-10 minutes. While the medallions are cooking, reduce the fat in the pan slightly with red wine or stock. Stir in crème fraîche, season with salt and pepper, and serve with the meat. Serve with baguette for soaking up the rich sauce.
