Pork ribs, braised

Ingredients for 4 servings:

  • 1 kg ribs (pork spare ribs)
  • Salt
  • pepper
  • marjoram
  • 2 onions
  • 4 tbsp oil
  • 2 bay leaves
  • 4 grains allspice
  • ¼ liter of water, hot
  • 2 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Rinse the ribs under cold running water, pat dry, and cut into portions (depending on your appetite). Rub with salt, pepper, and marjoram. Peel and quarter the onions. Heat the oil in a casserole dish and brown the meat and onions in batches. Add the bay leaves and allspice berries, then pour in the hot water and lemon juice. Cover the dish and place it in the oven. Preheat to 200-220°C (top/bottom heat). Preheat to 180-200°C (fan oven). Preheat to gas mark 4-5. Braising time: approx. 55-60 minutes. About 10 minutes before the end of the braising time, brown the meat uncovered.
