Pork strips with peppers, mushrooms and rice

Ingredients for 4 servings:

  • 500 g pork (shredded), seasoned
  • 250 g mushrooms, sliced
  • 2 bell peppers, diced
  • 1 bag of rice
  • salt water
  • 1 onion(s), diced
  • 1 clove(s) garlic
  • 1 pack of cream
  • 1 pinch(s) of cayenne pepper
  • pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

This dish is a quick one for in between meals. I only ever have an hour for lunch, and since I can spend it at home, it has to be done quickly. The pork strips are already pre-seasoned if you buy them as gyros, etc. in various supermarkets. They usually come with onions, but I always add one. The pork strips and garlic are fried and deglazed with cream or milk (not quite as high in calories), then the chopped onion, bell pepper, and mushrooms are added. Canned mushrooms work too, but of course, they’re not as tasty as fresh ones. Season the whole thing with pepper and cayenne pepper. Meanwhile, cook the rice in salted water and either add it to the pan or serve separately. The whole thing is quick, easy, and incredibly delicious. The bell peppers are usually still a bit crunchy, as I have to have the whole thing ready in 20 minutes. If you have time, let everything simmer for 30 minutes.
