Pork with Mushrooms in Tomato Sauce

The perfect pork with mushrooms in tomato sauce recipe with a picture and simple step-by-step instructions.

For the meat:

  • 400 g Fillet tips, pork, fresh or frozen
  • 2 tbsp Soy sauce with mushroom flavor, (Kecap jamur), see note
  • 4 tbsp Sunflower oil

For the sauce:

  • 4 small Onions, red
  • 3 medium-sized Cloves of garlic, fresh
  • 1 smaller Chilli, green, fresh or frozen
  • 15 g Ginger, fresh or frozen
  • 4 medium-sized Tomatoes, red, fully ripe
  • 100 g Tomato juice
  • 2 tbsp Tomato puree
  • 4 g Chicken broth, Kraft bouillon
  • 1 pinch Pepper, black, fresh from the mill
  • 1 tsp Oyster sauce, (Saus Tiram)
  1. Cut the fillet tips across the grain into approx. 2 cm thick slices. Halve the slices and marinate with the soy sauce for 1 hour.

For the sauce:

  1. Heat 2 tablespoons of the sunflower oil in a wok. Add the first 4 ingredients for the sauce and stir-fry until the onions are translucent. Add the tomato pieces and stir-fry for another 2 minutes. Deglaze with the sauce mixture and simmer with the lid on for 5 minutes.
  2. Take off the stove and let cool down a bit. Put in the blender and puree for 1 minute at maximum speed. Season the puree with salt and black pepper and keep it warm.

The mushrooms:

  1. Remove the mushrooms from the tin, rinse and cut in half lengthways. Remove the stems from the peppers, wash them, cut open lengthways, unfold, core and cut halfway across into thin threads. Halve the other half lengthways and cut across into pieces approx. 1 cm wide. Wash the carrot, cap at both ends and peel. Using a coarse rasp, scrape off the appropriate amount from below.

Stir-frying:

  1. Clean the wok, heat it and add the remaining oil. Add the pieces of meat and stir-fry for 4 minutes. Add the mushrooms, peppers and shredded carrots and stir-fry for 1 minute. Deglaze with the sauce, mix in the coconut milk, garnish immediately and serve warm in the pan.
