Portuguese carrot salad

Ingredients for 2 servings:

  • 3 carrots
  • salt water
  • 2 cloves garlic
  • 1 bunch parsley, chopped
  • ½ cup(s) vinegar (red wine vinegar)
  • some olives, black
  • Paprika powder, sweet
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the carrots in salted water for 12 minutes and let cool. Slice and place in a bowl. Chop the olives into smaller pieces, if desired, and add them. Drizzle with 1/2 cup red wine vinegar, paprika, garlic, oil, and a pinch of salt, if desired, and chill. Sprinkle with parsley just before serving.
