Portuguese-style pig ears

Ingredients for 4 servings:

  • 4 pig’s ear(s)
  • 75 g lard
  • ½ liter of oil
  • 1 large onion(s), sliced
  • 1 sprig of parsley, finely chopped
  • 4 garlic cloves, crushed
  • Black pepper, freshly ground
  • 500 g tomatoes, diced, peeled
  • 2 green bell peppers, cut into strips
  • ½ liter white wine
  • 15 cl port wine

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the lard and oil in a pan and sauté the onion, parsley, and garlic clove until golden brown. Season with pepper, add the ears, and fry until light brown. Add the peppers and tomatoes, then add the port and white wine. Simmer gently with the lid on for 1.5-2 hours, until the ears are tender.
