Potato and bean salad with herring

Ingredients for 4 servings:

  • 300 g matjes fillet(s)
  • 8 potatoes
  • 1 small onion(s), preferably a red one, sliced
  • 125 g beans, green, fresh or frozen
  • 1 can kidney beans
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp herbs
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel the potatoes and boil for about 20 minutes, drain the water, and let the potatoes cool. Slice the cooled potatoes (this is quick and easy with an egg slicer). Peel and slice the onions. Trim and wash the beans (if fresh), and cook them in boiling salted water for 10 minutes, then refresh and drain. For the vinaigrette, mix the vinegar, salt, pepper, and salad herbs. Whisk in the olive oil. Mix the potatoes, beans, and onions and pour the vinaigrette over them. The salad can be served with whole herring or cut the fillets into small pieces and tossed with the salad.
