Potato and Cheese Cookies

Ingredients for 1 servings:

  • 60 g butter
  • 120 g oat flakes
  • 3 eggs
  • 100 g ham
  • 250 g jacket potatoes, from the previous day
  • salt and pepper
  • 100 g cheese, grated
  • 200 ml water

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 20 minutes

For 18 savory cookies

Heat the water and butter in a saucepan. Stir in the oats and eggs, stirring constantly until the dough starts to pull away from the sides of the pan. Remove from the heat. Finely dice the ham, peel and mash the potatoes, and add them to the dough along with the ham. Season with salt and pepper, and let the dough rest in the refrigerator for about 30 minutes. Preheat the oven to 200°C and line a baking sheet with baking paper. Remove the dough from the refrigerator, form 18 balls, flatten them, and place them on the baking sheet, spacing them apart. Sprinkle the cheese over the dough and place in the oven for 15 minutes, until the cheese is golden brown. Let cool. They also taste good lukewarm. Tip: The cookies taste even better if you add 2 teaspoons of chopped herbs.
