Potato and chestnut puree

Ingredients for 2 servings:

  • 250 g potatoes
  • 2 onions
  • 250 g chestnuts, pre-cooked
  • e.g. milk
  • e.g. cream
  • 2 tbsp butter
  • 1 tbsp flour
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and cook in salted water until soft, then add the chestnuts about 10 minutes before the end of the cooking time. When the potatoes are tender, drain the water. Heat the milk and cream in a saucepan (1:1 ratio). Mash the potatoes and chestnuts and stir into the milk and cream mixture with a wooden spoon until the desired consistency is reached. Peel and dice the onions and sauté them in a saucepan with 1 tablespoon of butter. Dust with 1 tablespoon of flour, brown lightly, and stir into the potato and chestnut mash. Season with salt and stir in the remaining butter. A great accompaniment to Christmas goose or duck.
