Potato and ham casserole

Ingredients for 2 servings:

  • 300 g potatoes
  • 200 g cream cheese, grainy
  • 75 g diced ham
  • 1 spring onion(s)
  • 1 egg(s)
  • 75 g cheese, grated, low-fat
  • salt and pepper
  • nutmeg
  • garlic powder
  • Parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 180°C (top/bottom heat). Peel the potatoes and cut into small cubes. Slice the spring onions into rings, reserving the green parts. Chop the parsley. Place the potato cubes, ham cubes, and the white part of the spring onions in a baking dish, season with salt, pepper, and garlic powder, and mix everything together. Beat the egg and cream cheese and season with salt, pepper, nutmeg, and garlic powder. Fold in the chopped parsley and green onion rings and pour everything over the potato and ham mixture. Cover the casserole with a lid or aluminum foil and bake in the oven for 45 minutes. Remove the lid or foil during the last 15 minutes and sprinkle with grated cheese.
