Potato and Ham Muffins

- 75 g Raw ham
- 1 Onion
- 1 Egg
- 300 g Buttermilk
- 50 ml Oil
- 2,5 tbsp Chives
- 120 g Flour
- 1 Pck. Baking powder
- 0,5 Pck. Baking soda
- 0,5 tsp Salt
- Nutmeg
- 200 g Salt potatoes
- Fry the ham until crispy. Add the onion and fry until soft.
- Whisk the egg a little in a bowl. Pour in the buttermilk and oil and stir well. Chives with it. Stir in the ham and onion mixture.
- Mix the flour, baking powder, baking soda, salt and nutmeg.
- Roughly mash the boiled potatoes and mix with the flour mixture.
- Add the potato and flour mixture to the egg mixture and stir briefly.
- Fill into muffin molds and bake in the oven preheated to 180 ° for about 25-30 minutes.
