Ingredients
 

  • 1 kg Boiled firm boiling potatoes
  • 125 g Boiled ham
  • 125 g Lean raw ham
  • 8 Eggs
  • Salt pepper
  • 1 bunch Flat leaf parsley
  • 4 tbsp Oil
  • 40 g Butter

Instructions
 

  • Peel the potatoes and cut them into slices.
  • Cut both types of ham into cubes or the lean ones are already available to buy 🙂 Whisk the eggs and season with salt and pepper. Rinse the parsley, pat dry and roughly chop.
  • Heat the oil and butter in a large pan, then fry the potato slices until brown, add the diced ham and fry briefly. Season with salt and pepper and stir in half of the parsley.
  • Put everything in a large flat baking dish and pour the eggs over them. Then bake in the preheated oven at around 180 ° C for about 30 minutes.
