Ingredients
- 1 kg Boiled firm boiling potatoes
- 125 g Boiled ham
- 125 g Lean raw ham
- 8 Eggs
- Salt pepper
- 1 bunch Flat leaf parsley
- 4 tbsp Oil
- 40 g Butter
Instructions
- Peel the potatoes and cut them into slices.
- Cut both types of ham into cubes or the lean ones are already available to buy 🙂 Whisk the eggs and season with salt and pepper. Rinse the parsley, pat dry and roughly chop.
- Heat the oil and butter in a large pan, then fry the potato slices until brown, add the diced ham and fry briefly. Season with salt and pepper and stir in half of the parsley.
- Put everything in a large flat baking dish and pour the eggs over them. Then bake in the preheated oven at around 180 ° C for about 30 minutes.
