Ingredients
 

  • 100 g Gruyere cheese
  • 3 Free range eggs
  • 5 tbsp Extra virgin olive oil
  • 125 ml Milk
  • 120 g Cornmeal
  • 2 tsp Tartar baking powder
  • 150 g Spelt flour 630
  • 12 slices Cooked ham
  • 2 Tomatoes red fresh

Instructions
 

  • Grate the gruyere.
  • Whisk eggs with olive oil and milk.
  • Mix the Gruyere with the corn flour, baking powder and spelled flour.
  • Stir the cheese and flour mixture into the liquid ingredients.
  • Preheat the oven to 160 ° C fan oven.
  • Place the ham strips in the muffin pan and fill up to 2/3 of the batter with a maximum of 2/3 of the batter. Cut the tomatoes into slices and place on the dough. Place the overhanging strips of bacon over the muffin.
  • Bake the muffins in the oven for about 30 minutes. Let the muffin cool down a little and remove from the mold.

TIP

  • For even more juiciness in the dough, 1 teaspoon of dough, 1 slice of tomatoes, 1 teaspoon of dough and finally a slice of tomato.
