Potato and Ham Omelette According to Ivanka

The perfect potato and ham omelette according to ivanka recipe with a picture and simple step-by-step instructions.

  • 400 g Potato cubes
  • 100 g Onion cubes
  • 100 g Cubes of cadet ham, mildly smoked
  • 6 Eggs
  • 2 tbsp Milk
  • 1 tsp Salt
  • 0,5 tsp Pepper
  • 0,5 tsp Chilli flakes
  • 4 tbsp Peanut oil
  • Pickled cucumbers (here: from mom’s own garden!)
  1. Peel, wash and finely dice the potatoes. Peel the onions and finely dice them. Whisk eggs with milk (2 tablespoons), salt (½ teaspoon) and diced ham with a fork. Heat peanut oil (4 tbsp) in a coated pan and fry the potato cubes vigorously. Just before they are done add the onion cubes. Add the egg mixture and swirl the pan in all directions to distribute / let it run. Always move everything with the spatula. Put a plate on top and turn the omelette and slide it back into the pan. Pepper and salt everything, quarter, arrange on a plate with cucumber and serve.
