Potato and herb patties with mozzarella filling

Ingredients for 4 servings:

  • 400 g potatoes
  • 75 g spelt flour
  • 125 g Parmesan, freshly grated
  • 1 egg(s)
  • 6 basil leaves
  • 2 sage leaves
  • 2 sprigs rosemary
  • 8 mini mozzarella
  • nutmeg
  • Sea salt and pepper
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Boil the potatoes in salted water. Then, while the potatoes are still hot, press them through a potato ricer. Let them cool slightly. Meanwhile, finely chop the herbs. Add the flour, egg, and Parmesan to the potatoes and mix everything into a smooth dough. Now add the spices and herbs. Form the dough into small rounds. Make a well in the center, add some mozzarella, and reseal. Fry the rounds in a little oil in a pan until golden brown. The rounds can be served hot or cold.
