Potato and minced meat stew

Ingredients for 4 servings:

  • 1 onion(s) or 2 spring onions, finely diced
  • 2 cloves garlic
  • 500 g minced meat
  • 50 g bacon
  • 1 bell pepper(s), cut into pieces
  • 500 g potatoes, roughly diced
  • 1 pack of tomatoes, pureed (500 g)
  • 1 small can of corn
  • 1 can kidney beans
  • 100 g bacon, finely diced
  • Salt
  • Cayenne pepper
  • Paprika powder
  • Spice mix (Vegeta) or soup seasoning
  • basil
  • some tomato paste, if desired
  • some oil
  • possibly vegetables of your choice

Sauté the onion in a little oil until translucent. Add the bacon and ground beef, press in the garlic, and fry until the beef is lightly browned. Add the potatoes and bell peppers and fry briefly. Then pour in the pureed tomatoes. Season with salt, cayenne pepper, paprika, Vegeta or soup seasoning, and basil, and simmer for about 10-15 minutes – the potatoes should be tender. Stir in the beans, corn, and tomato paste (if desired), and let it simmer for another 5 minutes. You can vary the vegetables depending on what you have in your fridge. It also works great with fresh tomatoes, carrots, zucchini pieces, etc.
