Potato and sausage salad

Ingredients for 2 servings:

  • 400 g jacket potatoes
  • 150 g black pudding
  • 1 large onion(s)
  • 1 tsp mustard, medium hot
  • 1 tsp sugar
  • salt and pepper
  • ⅛ liter meat broth
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 box of cress
  • 1 jar sausages (cocktail sausages)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Peel the potatoes while they’re still hot and slice them. Slice the sausage and add it to the potatoes along with the chopped onion. Mix the mustard with sugar, salt, pepper, meat broth, and vinegar. Add the olive oil and pour over the salad. Let it marinate (at least 1 hour). Sprinkle with cress and garnish with cocktail sausages before serving.
