Ingredients for 1 servings:

  • 1 small schnitzel, fried, from the day before
  • 2 potatoes, cooked, from the day before
  • ½ red bell pepper(s)
  • ½ bell pepper(s), yellow
  • 1 large tomato(s)
  • 150 g natural yogurt, 3.5%
  • 1 tbsp mustard (honey)
  • 1 shallot(s)
  • 2 cloves garlic
  • 1 tbsp mixed herbs, frozen
  • Sea salt, from the mill
  • Pepper, colorful, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Potato schnitzel, pepper, and tomato salad with yogurt, mustard, shallot, and herb dressing

In a bowl, first mix the yogurt with the mustard. Peel the shallot, dice it, and add it to the bowl. Peel the garlic, dice it, and add it to the bowl. Add the herbs, stir, and season to taste. Slice the potatoes and add them to the bowl with the dressing. Dice the schnitzel and add it to the bowl. Deseed both bell pepper halves, dice them, and add them to the bowl. Remove the stem from the tomato, dice it, and add it to the bowl. Carefully mix everything together, season to taste, and serve on a plate.
