Ingredients for 1 servings:

  • 500 g potatoes
  • 500 g flour
  • 1 tsp salt
  • 1 packet of yeast (dry yeast)
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 125 ml water, hot
  • Flour for the work surface

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel and grate the potatoes, then pour over 125 ml of hot water. In a second bowl, mix the flour, salt, and dried yeast. Mix the olive oil and sugar into the potatoes. Add the flour mixture and knead everything thoroughly. Transfer to a floured work surface and knead with your hands for 5 minutes until you have a smooth dough. Transfer the dough to a bowl, cover with a kitchen towel or lid, and leave in a warm place until it has doubled in size. Knead again and shape into a firm loaf. Score several times with the tip of a knife. Place on a baking sheet and bake in the lower third of the oven at 225 °C (200 °C fan oven) for 25 minutes. Reduce the heat and bake at 200 °C (180 °C fan oven) for another 30 minutes. Remove from the oven and let cool.
