Ingredients for 1 servings:

  • 500 g potatoes
  • 125 ml milk
  • 350 g flour (type 1050)
  • 1 egg(s)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 ½ tsp sugar
  • 30 g yeast
  • 70 g bacon, streaky
  • 1 large onion(s)
  • 2 bunches of chives

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

great with grilled food or antipasti buffet

Finely grate raw, peeled potatoes, place them on a kitchen towel, and squeeze the excess water. Add lukewarm milk to the mixture, then add the flour, egg, olive oil, salt, sugar, and crumbled yeast. Knead into a smooth dough and beat until it pulls away from the bowl. Cover and let rise for about 30 minutes. Dice the bacon and onions, and finely chop the chives, and knead them into the risen dough. Place the dough in a greased loaf pan, cover, and let rise for another 30 minutes. Bake in a preheated oven at 200°C for about 45 minutes. Tastes great with tzatziki, olives, and feta cheese!
