Ingredients for 6 servings:

  • 750 g potatoes
  • 75 g butter
  • nutmeg
  • salt and pepper
  • possibly herbs, e.g. thyme or finely chopped rosemary
  • Clarified butter, for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Side dish to the main course Christmas menu 2011

This side dish is easy to prepare. Boil the potatoes with their skins on, let them cool briefly, peel them, and mash them thoroughly with the butter. Season with salt, pepper, and nutmeg. Add herbs, if desired. Press the mixture into 5 appetizer rings and place them on a plate, cover, and refrigerate until ready to serve. To serve, press the rings out of the appetizer rings and fry them in a pan with hot clarified butter until golden brown on both sides. Fill the appetizer rings only 2/3 full. This side dish goes very well with steaks or a delicious mushroom ragout.
