Potato, carrot and ham casserole

Ingredients for 4 servings:

  • 1,200 g potatoes
  • 650 g carrot(s)
  • 310 g ham
  • 150 g grated cheese
  • 500 ml vegetable stock
  • 200 ml cream
  • 200 g sour cream
  • salt and pepper
  • possibly flour

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel and slice the potatoes and carrots. Cut the ham into small pieces. Place the potatoes, carrots, and ham in a casserole dish. For the cream sauce, cook the vegetable broth with the cream and sour cream for about five minutes. Season the sauce with salt and pepper and thicken with a little flour, if desired. Pour the sauce over the potatoes, carrots, and ham. Sprinkle the cheese over the sauce and the other ingredients in the casserole dish. Preheat the oven to 200°C (top/bottom heat) and bake the casserole for about 40 minutes.
