Potato – Carrot – Rösti

Ingredients for 2 servings:

  • 3 m.-sized potatoes
  • 3 m.-large carrot(s)
  • 2 eggs
  • 5 tbsp oat flakes
  • 3 tbsp flour
  • Salt and pepper, from the mill
  • Nutmeg, freshly grated
  • Oil for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and coarsely grate the potatoes and carrots. Add the eggs, oats, and flour, season with salt, pepper, and nutmeg, and mix everything well with a fork. Let stand for 10-15 minutes. Line a baking sheet with parchment paper. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Heat a little oil in a pan and fry the potato and carrot mixture in batches until golden brown on both sides. Use about 2 tablespoons of mixture per rösti. Flatten the rösti slightly while frying. Carefully place the rösti on the prepared baking sheet and finish cooking in the oven for about 15 minutes. Serve with apple compote.
