Ingredients for 4 servings:

  • 12 medium-sized potatoes (3 per person)
  • 250 g cooked ham
  • 1 bunch of chives
  • 1 bunch of parsley or 1 cup of frozen herbs of your choice
  • 4 eggs
  • 1 cup of quark or cream cheese
  • ½ cup cream
  • 2 spring onions, finely chopped
  • 50 g Parmesan, grated
  • 200 g cheese, spicy for gratinating
  • salt and pepper
  • nutmeg
  • Caraway powder
  • chili
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

with ham or vegetarian, a great leftover meal

Boil the potatoes, peel them, and then slice them. Place them in a greased casserole dish. Dice the ham, if desired, and arrange them over the potatoes, along with the spring onion sticks. Whisk together the eggs, quark, and cream (if desired) with the herbs. Season well to taste, and finally stir in the Parmesan cheese. Pour the mixture evenly over the potatoes. Bake the casserole in the oven at 200°C for 30 minutes. Finally, top with the cheese and bake for another 10 minutes. Serve with a green salad and a cold beer.
