Potato casserole with feta

Ingredients for 4 servings:

  • 2 onions
  • 2 garlic cloves
  • 250 g ham (Katenschinken), diced
  • Oil for frying
  • 1 kg potatoes
  • 200 g feta cheese
  • 1 bunch of parsley
  • 200 ml cream or milk
  • 150 g sour cream
  • 2 eggs
  • salt and pepper
  • Paprika powder

Working time approx. 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 25 minutes

Boil the potatoes with their skins on for 15 minutes, peel, and slice. Dice the onions and sauté them with the garlic and the ham. Place the onion and ham mixture in a baking dish, arrange the potato slices on top, and scatter 3/4 of the crumbled feta cheese over the top. Preheat the oven to 180°C (fan oven). For the sauce, puree 1/4 of the feta cheese with cream and mix with the sour cream and eggs. Season with salt, pepper, and paprika. Pour this sauce over the casserole and bake for 35 minutes. Sprinkle with the chopped parsley. The cream can also be replaced with milk.
