Potato casserole with vegetable broth, bacon and onions

Ingredients for 4 servings:

  • 1 kg potatoes
  • salt and pepper
  • 1 tsp rosemary, chopped
  • 1 tsp thyme, chopped
  • 700 ml vegetable stock
  • 125 g smoked bacon cubes
  • 1 large onion(s), diced

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Peel the potatoes and slice thinly with a knife or a slicer. Place the potato slices in a baking dish and season evenly with salt, pepper, rosemary, and thyme. Pour the hot vegetable stock over the potato slices and mix everything together. Fry the smoked bacon cubes in a pan until crispy brown, then add the diced onions and brown them lightly. Spread the onion and bacon mixture evenly over the potatoes. Bake the potato casserole in a preheated oven at 200°C (top/bottom heat) for about 45 minutes, until the potatoes are tender and the top layer is crispy brown.
