Potato casserole with vegetables – the classic
The potato casserole with vegetables should not be missing in any kitchen. Especially when you are expecting guests and when it has to be quick, you can prepare the potato casserole in no time at all. Many people always have potatoes and frozen vegetables around the house, so the basic recipe is easy to prepare.
- Ingredients: You need 500 grams of potatoes, 500 grams of broccoli, 500 grams of cauliflower, 200 grams of carrots, an onion, 300ml of vegetable stock, some butter and flour, salt, pepper, sugar, and 100ml of milk. Don’t forget the cheese to taste.
- Preparation: Peel the potatoes and wash them. Then bring some water to a boil in a saucepan and add the potatoes to the saucepan with a little salt. Boil the potatoes until soft. Meanwhile, peel and chop the carrots, and wash and chop the broccoli and cauliflower into bite-sized pieces.
- If you like broccoli a little softer, you can also cook it briefly. You can add it briefly to the potatoes at the end. Peel, wash, and dice the onion. Once the potatoes are done, drain them. Catch the broth though.
- Heat some butter or fat in a saucepan. Add the diced onions and sauté them. Then dust the onions with some flour and sauté the mixture. Finally, add the broth and milk. Briefly boil the mixture again. Stir so that no lumps form. Season to taste.
- Now take an ovenproof dish and fill the vegetables in it. Then pour in the sauce. Sprinkle the casserole with enough cheese to taste. Grated mozzarella or gouda are suitable. The casserole prepares well at 200 degrees for 20 minutes. Enjoy your meal!
Potato casserole with fish
Potato casserole can also be prepared with fish. You can basically choose the type of fish that you like. Redfish fillet tastes wonderful.
- Ingredients: For this casserole, you need about 250 grams of potatoes, 500 grams of redfish fillet, 500 grams of spinach leaves, a cup of cream, cheese, salt, pepper, and garlic. Depending on your taste, you can refine the casserole with a little lemon juice.
- Preparation: Peel, wash, and cut the potatoes into thin slices. Lay out the slices in the casserole dish that you want to use later for the casserole. Salt well and cook the potatoes for 20 minutes at 200 degrees. This causes the potatoes to soften and lose water.
- Wash the fish. Portion it into pieces you like. It can be bite-sized pieces or larger pieces. Put the fish on the potatoes and season. You can use salt and pepper for this. The casserole goes into the oven at 200 degrees for a quarter of an hour.
- While the fish is in the oven, you can prepare the sauce. Wash the spinach and remove any tough stems.
- Then heat the cream in a saucepan. Add the spinach, mix, and season. Then pour the sauce into the casserole dish. Cover the casserole with cheese and bake the dish until the cheese is golden brown.
Potato casserole with meat
Potato casserole with meat is not very different from potato casserole with vegetables.
- Ingredients: You need 500 grams of potatoes, 500 grams of minced meat, an onion, spices, 500 grams of broccoli, 300ml of vegetable stock, 100ml of milk, an eggplant, a zucchini, some butter, flour, and cheese.
- Preparation: Peel, wash, and cook the potatoes until tender. Then shock them and dice the potatoes into pieces. While the potatoes are cooking, you can slice the washed eggplant and zucchini and steam them in the oven at 200 degrees until tender.
- You don’t have to throw away the water from the potatoes. Leave 300ml for the sauce. In a saucepan, melt some fat or butter. Then peel and dice the onion and sauté it. Sweat the mixture with some flour. Finally, pour in the vegetable broth and milk and boil again while stirring until the sauce has the desired consistency.
- Wash and cut the broccoli into bite-sized pieces. Then peel another onion and fry it with the minced meat. Optionally, you can add grated carrots to the minced meat. Then layer all the ingredients in the desired order in an ovenproof casserole dish and sprinkle with cheese. Bake the casserole until the cheese is golden brown.
