Ingredients for 20 servings:

  • 100 g butter
  • 85 g sugar
  • 2 eggs
  • 200 g potatoes, cooked
  • 200 g flour
  • 3 tsp baking powder
  • 1 tbsp oat flakes
  • 150 g marzipan – raw mass
  • 2 eggs, including the yolk, for brushing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat the butter and sugar until fluffy, then add the eggs and continue beating. Finely mash the cooked potatoes and combine with the flour, baking powder, oats, and the butter mixture to form a dough. Roll out the dough thinly and cut out triangles. Spread them with the marzipan and roll them into croissants. Place all the croissants on a greased baking sheet and brush with the beaten egg yolk. Bake in a preheated oven at approximately 220°C for 10-15 minutes (you’ll need to keep an eye on them!).
