Ingredients for 5 servings:

  • 300 g flour
  • 75 g sugar
  • ½ bottle of bitter almond flavor
  • ½ pack of baking powder
  • 50 g butter
  • 250 g potatoes, boiled
  • 1 egg(s)
  • 150 g marzipan
  • 150 g apricot jam
  • 1 egg yolk
  • powdered sugar

Something made from potatoes for those with a sweet tooth

Mix the flour, baking powder, sugar, softened butter, egg, and bitter almond flavoring with a dough hook until a smooth dough forms. (Add a little water if necessary). Then press the cooled potatoes through a potato ricer and knead them into the dough. Roll out the dough about 0.5 cm thick into a round disc (about 40 cm) and cut into 12 pieces like a cake. Place some marzipan and apricot jam on the wide end of these triangles. Roll them up into croissants. Point upwards and brush with egg yolk. Place on a baking sheet lined with baking paper. Bake in a preheated oven at 170-200 degrees Celsius for about 20 minutes. Dust with powdered sugar, if desired.
