Potato frikadelle filled with feta cheese

Ingredients for 4 servings:

  • 1 kg potatoes, floury
  • 1 onion(s)
  • 1 garlic clove(s)
  • 10 g butter
  • 2 eggs
  • 2 tbsp potato starch
  • salt and pepper
  • Thyme
  • 200 g sheep’s cheese
  • Oil or clarified butter for frying

Boil the potatoes for about 20 minutes, rinse, peel, and press through a potato ricer. Peel and finely dice the onion and garlic, then sauté in butter. Cut the feta cheese into eight pieces. Add the eggs, potato starch, and diced onion and garlic to the potatoes; knead well and season with salt, pepper, and thyme. Form the mixture into eight patties, press a piece of feta cheese into the center of each, and coat thoroughly with the potato mixture. Heat oil in a pan and fry the potato patties until golden brown on both sides. Serve with a mixed salad, cucumber or green bean salad, or braised cherry tomatoes. Tip: Depending on your taste, the feta cheese can be replaced with goat cheese, Camembert, or mountain cheese.
