Potato, ham and cheese muffins

Ingredients for 3 servings:

  • 600 g potatoes
  • 1 clove(s) garlic, grated
  • 25 g flour
  • 25 g breadcrumbs
  • 1 egg(s)
  • 80 g diced ham
  • 50 g cheese, grated
  • 2 tbsp mixed herbs (rosemary, thyme, sage), chopped
  • salt and pepper
  • chili flakes
  • possibly nutmeg

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

for a Petromax muffin tin – enough for 6 muffins

Peel and coarsely grate the potatoes. Squeeze out some of the excess water from the potato mixture. Add the egg, flour, breadcrumbs, grated garlic, chopped herbs, and diced ham and mix. Season with salt, pepper, and chili flakes. If desired, add nutmeg. Pour the mixture into the prepared muffin tin and top with grated cheese. Bake in a preheated oven (directly on the grill or in a Dutch oven) at 180°C (top/bottom heat) for approximately 45-60 minutes. Served with a salad, this makes a small main course for 3 people. Or it can be served as a starter for 6 people.
