Ingredients for 4 servings:
- 350 g floury potatoes, cooked
- ½ tsp salt
- 150 g potato flour
- 250 g wheat flour type 550
- 1 tbsp parsley, freshly chopped
- ½ onion(s)
- 1 garlic clove(s)
- 100 g minced beef
- 1 egg(s)
- ½ tsp sweet paprika powder
- 1 pinch of black pepper, freshly ground
- ½ tsp salt
- 1 tsp clarified butter for frying
- some butter, liquid, for spreading
Instructions
Working time approx. 1 hour 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 45 minutes
For the dough, grate or mash the cooked potatoes and knead with salt, the flours, and the parsley to form a smooth dough. Divide the dough and roll out both halves between two sheets of cling film. Use the ravioli cutter to outline the heart-shaped shapes. For the filling, peel the onion and garlic clove and finely dice both (only half of the onion). Mix with the minced meat and fry briefly in a pan with hot clarified butter. Season with salt and pepper. For the first sheet of dough, place some of the minced meat filling in the center of the indicated hearts and cover with the second sheet of dough. Now use the ravioli cutter to cut out the hearts and place them on a baking sheet lined with foil or paper. Brush with melted butter. Repeat with the rest of the dough until it is used up. Bake the hearts in a preheated oven at 200°C (top/bottom heat) for about 10 minutes. Brush with butter again and reduce the temperature. Bake for another 20 minutes at 150°C, until the hearts begin to brown.
