Ingredients for 2 servings:
- 400 g potatoes
- 1 m.-sized onion(s)
- 1 m.-sized egg(s)
- 1 tomato(s), dried, very finely chopped
- 50 g breadcrumbs
- Parsley, very finely chopped (amount as desired)
- Salt
- black pepper
- Butter or lard for frying
- some oil for the dried tomatoes
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Peel the potatoes and boil until tender. Chop the onions. Mash the potatoes. Add the egg, chopped onions, parsley, and breadcrumbs and mix well. Briefly toss the very finely chopped sun-dried tomatoes in a little oil and add to the mixture. Season with salt and pepper. Form the mixture into patties and fry in a non-stick pan with buttercream or oil. Serve with a delicious gravy, vegetable side dish, or salad. They’re also delicious the next day, just briefly heated in the microwave. Or: Break up the potato patties again with a fork, warm them up, and top with two fried eggs. Serve with radishes, gherkins, tomatoes, cucumber, gherkins, beets, etc.
