Ingredients for 3 servings:

  • 3 potatoes (preferably long ones)
  • 1 cucumber(s), green
  • 1 carrot(s)
  • 50 g herb curd
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Peel the potatoes and, if necessary, trim them so that the front of the potato is pointed (for the mouse’s nose). Cut off a lid from the top (you’ll need this later). Now scoop out the larger potato half with a teaspoon. Brush the scooped-out potatoes with lids with oil (season if necessary) and place them in a casserole dish. Bake at 200°C for 45-60 minutes. (I usually remove the lids first, as they don’t need as much time). In the meantime, cut small circles from the cucumber skin for the eyes and also cut an approximately 8 cm long strip from the skin for the tail. Now cut thin slices from the carrot for the ears. When the potatoes are cooked, fill them with herb curd and replace the lid. Finally, attach the eyes and ears. Approx. 184 kcal per serving.
