Spare Ribs

Ingredients for 4 servings:

  • 4 medium-sized ribs (spare ribs, pork)
  • 4 tbsp ketchup
  • 1 tbsp mustard, medium hot
  • 1 tbsp honey
  • Worcestershire sauce
  • 5 dashes of Tabasco
  • 20 cloves garlic, crushed
  • Salt
  • 2 tsp, heaped pepper
  • 1 tsp, heaped chili sauce
  • 1 tbsp oregano, dried, ground in a coffee grinder
  • 1 tbsp basil, dried, ground in a coffee grinder
  • 1 tbsp coriander, ground in a coffee grinder
  • 1 cup soy sauce
  • 1 cup(s) beer
  • 200 g mayonnaise
  • 2 tbsp ketchup, mild
  • 3 tbsp sweet cream, whipped
  • 2 tsp, heaped horseradish, freshly grated
  • 3 tsp brandy
  • 2 dashes Worcestershire sauce
  • Salt
  • Pepper, white, from the mill

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

First, combine the first 14 ingredients (except for the spare ribs) into a sweet and spicy marinade. Season the spare ribs with salt and pepper and coat them with this marinade. Then marinate in the refrigerator for 24 hours. Either roast in a preheated oven at 180°C for about 45 minutes or grill slowly on all sides on the rack of a hot barbecue, brushing them with the marinade occasionally. For the cocktail sauce, combine the mayonnaise with ketchup, cream, horseradish, brandy, Worcestershire sauce, salt, and pepper, and serve with the side dish.
