Ingredients for 1 servings:

  • 200 g potatoes
  • 175 g flour
  • 125 g butter or margarine
  • 150 g sugar
  • 70 g oat flakes
  • 4 drops of bitter almond flavor
  • 2 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

makes 12 pieces

Boil the peeled potatoes and then mash them. Cream the butter with sugar, eggs, bitter almond flavoring, and salt until fluffy. Combine the flour with the baking powder and oat flakes. Add the mashed potatoes to the butter and sugar mixture and stir well. Pour the muffin batter into a greased muffin tin or baking cups and bake in a preheated oven at 180°C (fan oven) for approximately 20-25 minutes.
