Potato – nectarine – ginger – jam

Ingredients for 1 servings:

  • 300 g potatoes, new, floury (2 pieces)
  • 250 g nectarine(s) , (1 ½ pieces)
  • 2 pieces of ginger, finger-thick, about 1.5 cm long
  • 200 ml apple sauce, not too thick
  • 1 pinch(s) citric acid (equivalent to three fingers)
  • 1 pinch of cinnamon
  • 1 packet of vanilla sugar
  • 1 shot of rum, white
  • 375 g gelling sugar, 2:1
  • 2 shots of apple juice

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Own creation

Boil the potatoes in salted water until soft, then peel and mash them in a potato ricer. Peel and pit the nectarines. Then slice them very thinly. Add the applesauce to the mixture and fold in the juice and the remaining ingredients. Finally, add the gelling sugar (2:1). Mix everything well and let stand for a while. Bring to a boil and simmer for 4 minutes according to the instructions. Remove everything from the heat and stir in 1-2 shots of white rum (38% ABV). Stir well and pour into the prepared, hot twist-off jars.
