Ingredients for 1 servings:

  • 500 g cornelian cherries
  • 350 g elderberries
  • 150 g rowan berries
  • 100 g blackberries
  • 2 bananas
  • 1 nectarine(s)
  • 1 apple (corn apple)
  • 1 ginger, approx. 3-4 cm long
  • ½ lemon(s), the juice
  • 25 g citric acid
  • ½ tsp ground cinnamon
  • 1 tsp. clove powder
  • 2 packets of vanilla sugar
  • ⅛ liter apple juice, (1/8 l)
  • 1 pkt. gelling sugar, 3:1 (500 g)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

3. Variant

Wash the cornelian cherries, remove the stems, and cook them with a little apple juice until soft. Then strain them through a sieve and collect the jam in a bowl. Add the trimmed and washed elderberries, the also washed rowanberries, blackberries, the cored and washed nectarine, the washed, cored, and stemmed apple, and the finely chopped ginger root to a saucepan and cook until soft. Then transfer the mixture to a food mill and strain through. Combine the resulting jam with the cornelian cherry jam in a saucepan and let cool. Add the spices, lemon juice, and citric acid. Then mix the gelling sugar into the cooled jam and let stand for a while. Now cook the mixture for 4 minutes according to the instructions, then fill into hot, clean twist-off jars and immediately seal with the hot lids.
