- 200 g potatoes
- 30 g butter
- 150 g carrot(s)
- 100 g bell pepper(s), yellow
- 1 bunch of spring onions
- Thyme, marjoram or oregano
- salt and pepper
- 250 g cherry tomatoes
- 250 g feta cheese

Peel the potatoes and cut into small cubes. Heat the butter in a pan and fry the potato cubes over medium heat for about 10 minutes, turning occasionally. Peel the carrots and cut into thin slices. Halve the bell peppers, trim and wash them, and cut them into bite-sized cubes. Trim and wash the spring onions and cut them into small rings. Add the vegetables to the potatoes and fry for another 15 minutes, turning occasionally. Season with herbs, salt, and pepper. Wash and halve the tomatoes, add them to the potato pan, and heat through. Cut the feta into bite-sized pieces and mix into the potato pan to serve. 260 kcal per serving.
