Tomato sauce with parsnips

Ingredients for 1 servings:

  • 1 large tomato(s)
  • ½ small onion(s)
  • 1 tbsp tomato paste
  • 1 jar parsnip(s) (baby food), pureed
  • 1 tbsp rapeseed oil
  • pepper
  • n. B. herbs, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Sauce for toddlers and babies

Peel a large tomato, remove the stem, and dice. Peel half an onion and finely chop. Heat a little oil in a pan and sauté the onions. Add the tomato puree and sauté briefly. Then stir in the diced tomatoes and let them simmer briefly. Stir in a small jar of Alnatura parsnips from the baby section. Season to taste with pepper (we use about two turns of the pepper mill) and chopped herbs (we often use chives and thyme). Since traditional tomato sauce is boring, I often make this variation for our now 17-month-old daughter. It goes very well with pasta, rice, and gnocchi, and can be easily varied.
