Ingredients for 2 servings:
- some olive oil
- 1 onion(s)
- 7 m.-sized potatoes
- 3 bell peppers, red and orange
- some salt and pepper
- 2 tsp, heaped thyme
- some spice mix (olive spice) or
- Herbs of Provence, dried
- 1 pack of sheep’s cheese
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dice the onions and sauté in olive oil in a pan. Dice the potatoes, add them to the pan, and toss well to ensure they are evenly coated with oil. Cook with the lid closed for 15 minutes. Cut the bell peppers into small strips and add them to the pan. Season with salt and pepper, and add the thyme and olive seasoning. The olive seasoning is a spice mix. If you don’t have any, you can use Provençal herbs instead. Toss well to ensure everything is coated with oil. Cook with the lid closed for another 5 minutes. Make sure the potatoes are cooked through. Leave in the pan a little longer if necessary. Dice the feta cheese and mix it into the vegetable mixture. Leave in the pan with the lid closed for 2 minutes, then serve. Green salad and red wine go well with this dish.
