Ingredients for 6 servings:

  • 125 g potatoes, cooked, peeled and diced
  • cream
  • 200 g butter, soft
  • Salt
  • Pepper, freshly ground
  • Nutmeg, freshly grated
  • 150 g flour
  • 1 egg(s), beaten
  • 2 tbsp caraway seeds

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make mashed potatoes from potatoes, cream, 75g butter, salt, pepper and nutmeg. Preheat oven to 200°C. Put 125g softened butter, 150g flour, salt, freshly ground pepper and mashed potatoes in a bowl and mix by hand until doughy. Place the flour and dough on a work surface, knead again, wrap in cling film and chill for 30 minutes. Put the flour on a work surface, roll out the dough 8mm thin and cut into 2 x 7cm strips. Beat 1 egg and brush the cookies. Sprinkle 2 tbsp caraway seeds (can be omitted) on the cookies. Place the cookies on a baking tray and bake for 12 minutes until golden brown. Serve warm or cold.
