Potato pancakes made from boiled potatoes

Ingredients for 2 servings:

  • 5 small potatoes, boiled
  • 2 servings of egg(s) (egg substitute)
  • 5 tbsp oat flakes
  • 5 tbsp flour, gluten-free
  • 50 ml soy milk (soy drink)
  • 1 tsp, heaped flaxseed
  • Sugar
  • Salt
  • Cinnamon
  • nutmeg
  • Oil, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Egg-free, gluten-free

Mash the cooked potatoes, beat the egg substitute until frothy, and add it. Add the flour, oatmeal, and soy milk, depending on the consistency, and mix everything together. Season to taste. Cover the bottom of a pan with oil, heat it, add the pancakes, and cook over medium heat (6 of 9) for 5 minutes on each side. Drain the fat on kitchen paper. Enjoy with applesauce, sugar, and cinnamon.
