Potato pancakes on leaf spinach – quick and easy

Ingredients for 4 servings:

  • 8 potato pancakes, frozen
  • 500 g leaf spinach, frozen, seasoned
  • 8 slices of bacon
  • 4 eggs
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Prepare the potato pancakes and spinach leaves according to the package instructions. Fry the bacon slices in a nonstick pan without fat until crispy, then remove and place on a plate lined with kitchen paper. Fry the eggs in the rendered bacon fat until fried. Season the egg whites with salt and the egg yolks with pepper. Now it’s time to serve: Divide the spinach among four plates, top each with two potato pancakes, and top each with a fried egg and two slices of fried bacon.
